Lemon-Garlic Shrimp With White Beans

  • 1 pound large shrimp, peeled and deveined
  • ยฝ teaspoon kosher salt, plus more to taste
  • ยผ teaspoon freshly ground black pepper
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons fresh lemon juice
  • ยผ cup chopped flat-leaf parsley

Preparation

  1. Build the base. Warm the olive oil in a large skillet over medium heat. Add the garlic and red-pepper flakes and stir for about 1 minute, until fragrant but not browned. Add the tomatoes and cook for 3 to 4 minutes, stirring occasionally, until they begin to soften.
  2. Simmer the beans. Stir in the beans and broth. Bring to a gentle simmer and cook for 4 to 5 minutes. Mash a spoonful of beans against the side of the pan to lightly thicken the broth.
  3. Cook the shrimp. Season the shrimp with the salt and black pepper. Nestle them into the beans in a single layer. Simmer gently for about 3 to 5 minutes, turning once, until the shrimp are opaque and firm throughout. Add a splash of water if the pan becomes dry.
  4. Finish and serve. Remove the skillet from the heat. Stir in the lemon zest, lemon juice and parsley. Taste and adjust the salt. Spoon into shallow bowls and serve with bread and lemon wedges.
